Thumbprint Cookies

I don’t think there’s ever been a Christmas when I haven’t made these cookies.  My kids have always loved them! Ingredients: Cookies: 1 stick butter 1/4c packed brown sugar 1 large egg, separated 1c all purpose flour 1/4t salt 1c finely chopped pecans Filling: 1c powdered sugar 1/2t vanilla 3-4t milk food coloring Directions: Heat oven to 350 degrees. Sausage and Apple Stuffed Acorn Squash

Ingredients 2 acorn squash, halved and seeded 1 tablespoon butter, melted 1/4 teaspoon garlic salt 1/4 teaspoon ground sage 1 lb. pork sausage ( regular seasoning) 1/2 cup onion, finely chopped 1 celery rib, finely chopped 4 ounces mushrooms, chopped 2 apples, cored and chopped (Macintosh) 1 cup fine breadcrumbs 1/2 teaspoon sage salt and pepper 1 egg, beaten 2 tablespoons fresh parsley, chopped Directions Combine the melted butter, garlic salt and 1/4 teaspoons sage; brush over cut sides and cavity of squash. Apple-Cranberry Crisp

Ingredients 3 cups cubed Granny Smith apple (about 1 pound) 2 cups fresh cranberries 1/2 cup sugar Cooking spray 1/3 cup whole wheat flour 1 cup regular oats 1/2 cup packed brown sugar 1/4 cup canola oil Preparation Preheat oven to 350°. Ingredients: For the dry rub: 2 tablespoons salt About 40 grinds black pepper 2 tablespoons chili powder 1 tablespoon garlic powder 2 teaspoons ground coriander 2 teaspoons ground mustard seed 12 ounces good ale or dark beer, such as Bass 4 cloves garlic, chopped 1 5 -pound pork butt (shoulder of the animal) Directions: Combine rub ingredients in a bowl and mix well. Back to School:  How will you use your kitchen now that the kids are gone?

There are some smiling faces out there today and there are some teary eyed faces also now that school is back in session. No matter what the mood, kids are back into their routine and now we can get back to ours. I find the fall an exciting part of the year for cooking in my kitchen. Day 1 of “Super Bowl Eats” Barbecue Kielbasa

Crock pot apps!! I love it!! 3lb pkg of Keilbasa (sliced in 1/2 the long way, then into 1/2″ slices) 2 bottles of Kraft BBQ Sauce (we used “Original” but you can use any flavor depending on the flavor you want..Honey, Thick & Spicy….etc.) 1 cup of Brown Sugar (light or dark) 1 cup of Beer (optional) Slice Kielbasa. Add barbecue sauce, brown sugar and beer (optional) Cook in crock pot for 6-8 hours on low heat. Serve with toothpicks. Along with the Kielbasa we made “Mini-Junior Mint” Brownies!!! Women and the Superbowl

I love football and for me the super bowl is the highlight of the season. Having friends and family over to cheer the teams is great. Of course, I love “football food” too! For the big day, I like to make foods of the host city. This year, Super Bowl XLVII will be at the Superdome in New Orleans. Talk about a plethora of dishes in which to choose. Wow!
