Christmas Cookies

This holiday season, I thought I’d share one of my favorite cookie recipes from Christmas growing up.  My great aunt made these every year, and I really looked forward to them. Russian Tea Cookies 1 lb. Butter 1/2c Confectioner’s Sugar 2t Vanilla 4c Flour 2c Pecans, Finely Chopped Cream the butter.  Add sugar, beat until light.  Add vanilla.  Add flour and mix well.  Fold in nuts.  Use a small ice cream scoop to make balls about 1″ in diamater, place on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes.  Cool slightly then roll in confectioner’s sugar.  Makes about…

Easter is Approaching – Time to Boil the Eggs!

Coloring eggs for Easter was always a favorite activity when my children were little.  From what I can tell, that tradition lives on. I just ran across a video on AllRecipes.com that tells you how to boil eggs so they come out perfect every time, and the shells don’t stick when you peel them.  So aggravating when you’re trying to make egg salad! Guacamole is a healthy and yummy snack

I like Mexican food, but on the mild side.  I started making guacamole regularly when I realized that avocadoes are really good for you.  I make a quick,  easy and mild version. First I mash up one whole avocado.  Then I add a heaping tablespoon of my favorite salsa,  some lime juice – maybe a teaspoon,  a few shakes of garlic powder,  onion powder and sea salt.  Mix them all together,  and that’s it! Homemade Soup to Warm up the Winter

I love having hot soup in the winter time!  It takes off that chill that’s sometimes hard to get rid of.  Even though it has been a fairly mild winter around here, it’s certainly not summer! My Favorite Christmas Cookie Recipe

I can’t resist giving in to sugar cravings during the holidays!  I’ve been making these Chocolate Crinkles since I was a kid with my mom.  Please enjoy. Ingredients: 1/2 cup vegetable oil 4 oz. unsweetened baking chocolate 2 cups sugar 4 eggs 1 teaspoon vanilla 2 cups flour 1 teaspoon baking powder 1/2 teaspoon salt confectioner’s sugar Mix oil, melted chocolate and sugar.  Blend in eggs one at a time.  Add vanilla.
